Hamburger Cookies Ingredients

  • 48 vanilla wafer cookies (for the top and bottom “buns”)
  • 24 thin chocolate cookies ( Thin Mints or chocolate fudge cookies ) for the ” burger patty “
  • 1 cup sweetened shredded coconut (for the “lettuce”)
  • Green food coloring
  • 1/2 cup red frosting (for the “ketchup”)
  • 1/2 cup yellow frosting (for the “mustard”)
  • 2 tablespoons light corn syrup (for sticking and shine)
  • Sesame seeds (optional) (for the bun top)

Hamburger Cookies Instructions

  1. Tint the Coconut Put a few drops of green food coloring in a small bowl then stir it until the coconut is coated evenly ( just like crisp lettuce ).
  2. Prepare the ” buns ” Lay out 24 vanilla wafers on a tray ( round side down ) to make the bottom of the cookie burgers.
  3. Add the hamburger patties: A chocolate cookie sandwiched on each vanilla wafer is the hamburger patties.
  4. Add the ” lettuce ” and condiments: Spoon a little green coconut on top of each chocolate cookie and add a little bit of red and yellow frosting around the edges to make them look like they have ketchup and mustard peeking out.
  5. Cover with the bun: Take another vanilla wafer and brush the top (rounded side) of the bread with lightly brushed corn syrup (optional) or sprinkle a few unsalted peanuts on top for a hamburger bun look.
  6. Bake the cookie hamburgers and set aside to cool. Use a fork to gently spread the top vanilla wafer over each assembled “burger”.
