Oat Flour Chocolate Chip Cookie Recipe

Oat Flour Chocolate Chip Cookie Ingredients

  • 1 ½ cups oat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup coconut oil (melted and slightly cooled)
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet chocolate chips ( more if your heart desires )

  1. Preheat the oven to 350°F (175°C). Lay out a baking tray on a baking sheet with a piece of parchment paper (or use your favorite cookie tray (I have that one with all those love marks on it)).
  2. Whisk together the oat flour, baking soda and salt in a medium bowl.
  3. In a separate bowl add melted coconut oil and brown sugar and mix well to combine. Add egg and vanilla extract and stir until just combined.
  4. Mix in gradually the dry ingredients into the wet mixture, mixing just until dough comes together ( do not over mix ).
  5. Fold in the chocolate chips and if you have a little helper such as Luna shove in a couple extras!
  6. Scoop tablespoon sized portions of dough onto the prepared baking sheet and space about 2 inches apart.
  7. Bake for 8–10 minutes, or until the edges are lightly golden (the centers may look soft but will solidify as they cool).
  8. Cool for 5 minutes on the baking sheet and then on wire rack to cool completely ( or put one in your hands right now so it melts in your fingers ), I ‘ll tell!
